Zen Garden Soba Noodles

Ingredients

  • 8 oz soba noodles
  • 1 cup shredded carrots
  • 1 cup snow peas, trimmed and halved
  • 1 block extra firm tofu, cubed
  • 2 tbsp sesame seeds
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey or agave nectar
  • 1 tsp grated ginger
  • 2 cloves garlic, minced
  • 2 green onions, thinly sliced
  • 1 tbsp sesame oil
  • 1/4 cup vegetable broth

Instructions

  1. Boil the soba noodles according to package instructions. Drain and rinse with cold water. Set aside.
  2. In a large skillet, heat the sesame oil over medium heat. Add the tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
  3. In the same skillet, add the carrots, snow peas, ginger, and garlic. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, rice vinegar, honey, and vegetable broth. Pour the sauce into the skillet with the vegetables.
  5. Add the cooked soba noodles and tofu to the skillet. Toss everything together until well combined and heated through.
  6. Remove from heat and sprinkle with green onions and sesame seeds before serving.
