Zen Garden Soba Noodles
Zen Garden Soba Noodles are a simple and nourishing dish that originates from Chinese Buddhist cuisine. This recipe is a perfect balance of flavors and textures, making it a delightful addition to any meal.
Ingredients
- 8 oz soba noodles
- 1 cup shredded carrots
- 1 cup snow peas, trimmed and halved
- 1 block extra firm tofu, cubed
- 2 tbsp sesame seeds
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey or agave nectar
- 1 tsp grated ginger
- 2 cloves garlic, minced
- 2 green onions, thinly sliced
- 1 tbsp sesame oil
- 1/4 cup vegetable broth
Instructions
- Boil the soba noodles according to package instructions. Drain and rinse with cold water. Set aside.
- In a large skillet, heat the sesame oil over medium heat. Add the tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the carrots, snow peas, ginger, and garlic. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, rice vinegar, honey, and vegetable broth. Pour the sauce into the skillet with the vegetables.
- Add the cooked soba noodles and tofu to the skillet. Toss everything together until well combined and heated through.
- Remove from heat and sprinkle with green onions and sesame seeds before serving.
