Zen Garden Tofu Delight

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1/2 cup sliced mushrooms
  • 1/4 cup water chestnuts, sliced
  • 1/4 cup bamboo shoots
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds for garnish

Instructions

  1. In a small bowl, mix the soy sauce, rice vinegar, sesame oil, ginger, and garlic. Set aside.
  2. Coat the tofu cubes with cornstarch.
  3. Heat vegetable oil in a large skillet over medium heat. Add the tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
  4. In the same skillet, add the broccoli, bell pepper, mushrooms, water chestnuts, and bamboo shoots. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  5. Return the tofu to the skillet and pour the sauce over the tofu and vegetables. Cook for 2-3 minutes, stirring gently to coat everything with the sauce.
  6. Sprinkle with chopped green onions and sesame seeds before serving.
