Ingredients
- 4 large bell peppers
- 1 cup cooked chicken, shredded
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup tomato sauce
- 1/4 cup chicken broth
- 2 tablespoons olive oil
- Chopped fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the shredded chicken, cooked rice, paprika, thyme, salt, and pepper to the skillet. Stir to combine and cook for 2-3 minutes.
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Stuff the bell peppers with the chicken and rice mixture and place them in a baking dish.
- In a small bowl, mix the tomato sauce and chicken broth. Pour the mixture over the stuffed bell peppers.
- Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes until the peppers are tender.
- Remove from the oven and garnish with chopped fresh parsley before serving.
