Zenica Stuffed Bell Peppers with Rice and Chicken (Zeničke Punjene Paprike sa Rižom i Piletinom)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked chicken, shredded
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup tomato sauce
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil
  • Chopped fresh parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the shredded chicken, cooked rice, paprika, thyme, salt, and pepper to the skillet. Stir to combine and cook for 2-3 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Cut the tops off the bell peppers and remove the seeds and membranes.
  5. Stuff the bell peppers with the chicken and rice mixture and place them in a baking dish.
  6. In a small bowl, mix the tomato sauce and chicken broth. Pour the mixture over the stuffed bell peppers.
  7. Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes until the peppers are tender.
  8. Remove from the oven and garnish with chopped fresh parsley before serving.
