Zenica Stuffed Bell Peppers with Rice and Lamb (Zeničke Punjene Paprike sa Rižom i Janjetinom)

Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 500g ground lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups tomato sauce
  • 1 cup beef or vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the rice, ground lamb, onion, garlic, paprika, salt, and black pepper.
  4. Stuff the bell peppers with the rice and lamb mixture.
  5. Place the stuffed peppers in a deep pot or Dutch oven.
  6. In a separate bowl, mix together the tomato sauce, broth, and olive oil. Pour the mixture over the stuffed peppers.
  7. Cover the pot and cook on the stovetop over medium heat for 45-50 minutes, or until the peppers are tender and the filling is cooked through.
  8. Serve the Zeničke Punjene Paprike sa Rižom i Janjetinom hot, garnished with fresh parsley if desired.
