Zereshk Polo Ba Gosht (saffron-infused Rice With Lamb)

Ingredients

  • 2 cups basmati rice
  • 1 pound lamb, cut into cubes
  • 1 large onion, finely chopped
  • 1/2 cup dried barberries (zereshk)
  • 1/4 teaspoon saffron threads
  • 1/4 cup hot water
  • 4 tablespoons butter
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste

Instructions

  1. Place the saffron threads in a small bowl and pour the hot water over them. Let it steep for 10 minutes.
  2. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in cold water for 30 minutes, then drain.
  3. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
  4. Add the lamb cubes to the pot and cook until browned on all sides. Season with turmeric, salt, and pepper.
  5. Add the saffron water to the pot, cover, and simmer for 30 minutes until the lamb is tender.
  6. In a separate pot, bring water to a boil and add the drained rice. Cook for 5 minutes, then drain.
  7. In the same pot, melt the butter and layer the partially cooked rice on top of the lamb and onion mixture. Sprinkle the dried barberries over the rice.
  8. Cover the pot with a clean kitchen towel and a lid. Cook over low heat for 45 minutes to allow the rice to steam and the flavors to meld.
  9. Once done, gently fluff the rice with a fork and transfer to a serving platter.
