Zereshk Polo Ba Gosht (saffron-infused Rice With Lamb)
Zereshk Polo ba Gosht is a traditional Balochi dish featuring saffron-infused rice with tender lamb. This flavorful and aromatic dish is a staple in Balochi cuisine and is perfect for special occasions and gatherings.
Ingredients
- 2 cups basmati rice
- 1 pound lamb, cut into cubes
- 1 large onion, finely chopped
- 1/2 cup dried barberries (zereshk)
- 1/4 teaspoon saffron threads
- 1/4 cup hot water
- 4 tablespoons butter
- 2 tablespoons vegetable oil
- 1 teaspoon ground turmeric
- Salt and pepper to taste
Instructions
- Place the saffron threads in a small bowl and pour the hot water over them. Let it steep for 10 minutes.
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in cold water for 30 minutes, then drain.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
- Add the lamb cubes to the pot and cook until browned on all sides. Season with turmeric, salt, and pepper.
- Add the saffron water to the pot, cover, and simmer for 30 minutes until the lamb is tender.
- In a separate pot, bring water to a boil and add the drained rice. Cook for 5 minutes, then drain.
- In the same pot, melt the butter and layer the partially cooked rice on top of the lamb and onion mixture. Sprinkle the dried barberries over the rice.
- Cover the pot with a clean kitchen towel and a lid. Cook over low heat for 45 minutes to allow the rice to steam and the flavors to meld.
- Once done, gently fluff the rice with a fork and transfer to a serving platter.
