Zereshk Polo (fragrant Saffron And Almond Rice)
Zereshk Polo is a traditional Bukharan Jewish dish that features fragrant saffron and almond rice, topped with barberries for a burst of tartness. This dish is a delightful combination of flavors and textures, making it a perfect addition to any festive meal.
Ingredients
- 2 cups basmati rice
- 1/4 teaspoon saffron threads
- 1/4 cup hot water
- 1/2 cup slivered almonds
- 1/2 cup dried barberries
- 4 tablespoons butter
- Salt to taste
Instructions
- Rinse the basmati rice until the water runs clear, then soak the rice in water for 30 minutes.
- Dissolve the saffron threads in hot water and set aside.
- In a large pot, bring 6 cups of water to a boil. Add the soaked rice and cook for 5-7 minutes, or until the rice is parboiled. Drain the rice and set aside.
- In a non-stick pan, melt 2 tablespoons of butter over medium heat. Add the slivered almonds and toast until golden brown. Remove the almonds from the pan and set aside.
- In the same pan, melt the remaining 2 tablespoons of butter. Add the dried barberries and sauté for 2-3 minutes. Remove from heat and set aside.
- In the pot used to parboil the rice, spread a thin layer of the parboiled rice. Drizzle half of the saffron water over the rice. Repeat with another layer of rice and the remaining saffron water. Top with the toasted almonds and barberries.
- Cover the pot with a clean kitchen towel and a lid. Cook the rice over low heat for 30-35 minutes, or until the rice is fluffy and fully cooked.
- Fluff the rice with a fork before serving.
