Zereshk Polo (fragrant Saffron Chicken)

Ingredients

  • 4 chicken thighs
  • 2 cups basmati rice
  • 1 cup barberries (zereshk)
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon ground saffron
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the chicken thighs with olive oil, ground saffron, turmeric, salt, and pepper. Let it marinate for 30 minutes.
  2. Rinse the basmati rice until the water runs clear. Soak the rice in cold water for 30 minutes, then drain.
  3. In a pot, heat 2 tablespoons of olive oil and sauté the chopped onion until golden. Add the marinated chicken thighs and cook until browned on all sides.
  4. Add the drained rice to the pot and stir gently to combine with the chicken and onions. Pour in enough water to cover the rice by about 1 inch. Bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes.
  5. In a separate pan, sauté the barberries in a little olive oil for a few minutes until they plump up.
  6. Once the rice is cooked, fluff it with a fork and gently fold in the sautéed barberries.
  7. Transfer the Zereshk Polo to a serving platter, arranging the chicken thighs on top of the fragrant saffron rice. Serve hot and enjoy!
