Zereshk Polo (fragrant Saffron Chicken)
Zereshk Polo is a traditional Bukharan Jewish dish that features fragrant saffron chicken served with barberry rice. This dish is a delightful combination of savory and tangy flavors, making it a perfect choice for a special occasion or a family dinner.
Ingredients
- 4 chicken thighs
- 2 cups basmati rice
- 1 cup barberries (zereshk)
- 1 onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon ground saffron
- 1/2 teaspoon turmeric
- Salt and pepper to taste
Instructions
- In a large bowl, mix the chicken thighs with olive oil, ground saffron, turmeric, salt, and pepper. Let it marinate for 30 minutes.
- Rinse the basmati rice until the water runs clear. Soak the rice in cold water for 30 minutes, then drain.
- In a pot, heat 2 tablespoons of olive oil and sauté the chopped onion until golden. Add the marinated chicken thighs and cook until browned on all sides.
- Add the drained rice to the pot and stir gently to combine with the chicken and onions. Pour in enough water to cover the rice by about 1 inch. Bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes.
- In a separate pan, sauté the barberries in a little olive oil for a few minutes until they plump up.
- Once the rice is cooked, fluff it with a fork and gently fold in the sautéed barberries.
- Transfer the Zereshk Polo to a serving platter, arranging the chicken thighs on top of the fragrant saffron rice. Serve hot and enjoy!
