Zereshk Polo (persian Saffron Rice With Barberries)

Ingredients

  • 2 cups basmati rice
  • 1/4 teaspoon saffron threads
  • 1/4 cup butter
  • 1 onion, thinly sliced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup dried barberries
  • Salt and pepper to taste

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. Dissolve the saffron threads in 1/4 cup of hot water and set aside.
  3. In a large pot, melt the butter over medium heat. Add the sliced onion and sauté until golden brown.
  4. Stir in the cumin and cinnamon, then add the drained rice. Cook for 5 minutes, stirring occasionally.
  5. Pour the saffron water over the rice. Add 4 cups of water, salt, and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
  6. While the rice is cooking, rinse the barberries and sauté them in a little butter for a few minutes.
  7. Once the rice is cooked, fluff it with a fork and gently fold in the sautéed barberries.
  8. Transfer the Zereshk Polo to a serving platter and serve hot.
