Zereshk Polo (persian Saffron Rice With Barberries)
Zereshk Polo is a classic Persian dish featuring fragrant saffron rice topped with tangy barberries. This dish is a staple in Persian cuisine and is often served at special occasions and gatherings.
Ingredients
- 2 cups basmati rice
- 1/4 teaspoon saffron threads
- 1/4 cup butter
- 1 onion, thinly sliced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 cup dried barberries
- Salt and pepper to taste
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- Dissolve the saffron threads in 1/4 cup of hot water and set aside.
- In a large pot, melt the butter over medium heat. Add the sliced onion and sauté until golden brown.
- Stir in the cumin and cinnamon, then add the drained rice. Cook for 5 minutes, stirring occasionally.
- Pour the saffron water over the rice. Add 4 cups of water, salt, and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
- While the rice is cooking, rinse the barberries and sauté them in a little butter for a few minutes.
- Once the rice is cooked, fluff it with a fork and gently fold in the sautéed barberries.
- Transfer the Zereshk Polo to a serving platter and serve hot.
