Zereshk Polo (saffron Rice With Barberries)
Zereshk Polo, also known as Saffron Rice with Barberries, is a classic Iranian dish that combines aromatic saffron-infused rice with tangy barberries and tender chicken. This flavorful and colorful dish is perfect for special occasions and gatherings.
Ingredients
- 2 cups basmati rice, rinsed and soaked for 30 minutes
- 4 chicken thighs, skin-on
- 1 large onion, thinly sliced
- 1/2 teaspoon ground saffron, dissolved in 2 tablespoons hot water
- 1/2 cup dried barberries
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, bring 6 cups of water to a boil. Add the soaked rice and cook for 6-7 minutes until slightly tender. Drain and set aside.
- In a separate pan, heat the vegetable oil over medium heat. Add the sliced onion and sauté until golden brown. Remove half of the onions and set aside for garnish.
- Add the chicken thighs to the remaining onions in the pan. Season with salt and pepper, and cook until golden brown on both sides.
- Place the par-cooked rice back into the pot in layers, alternating with the saffron water and barberries. Cover and cook over low heat for 45 minutes.
- Once the rice is fully cooked, transfer it to a serving platter and top with the reserved caramelized onions.
