Zereshk Polo (saffron Rice With Barberries)

Ingredients

  • 2 cups basmati rice, rinsed and soaked for 30 minutes
  • 4 chicken thighs, skin-on
  • 1 large onion, thinly sliced
  • 1/2 teaspoon ground saffron, dissolved in 2 tablespoons hot water
  • 1/2 cup dried barberries
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring 6 cups of water to a boil. Add the soaked rice and cook for 6-7 minutes until slightly tender. Drain and set aside.
  2. In a separate pan, heat the vegetable oil over medium heat. Add the sliced onion and sauté until golden brown. Remove half of the onions and set aside for garnish.
  3. Add the chicken thighs to the remaining onions in the pan. Season with salt and pepper, and cook until golden brown on both sides.
  4. Place the par-cooked rice back into the pot in layers, alternating with the saffron water and barberries. Cover and cook over low heat for 45 minutes.
  5. Once the rice is fully cooked, transfer it to a serving platter and top with the reserved caramelized onions.
