Zereshk Polow (fragrant Cumin Chicken)
Zereshk Polow, also known as Fragrant Cumin Chicken, is a traditional dish in Bukharan Jewish Cuisine that is bursting with aromatic flavors. This dish combines tender chicken with fragrant cumin and tangy barberries, creating a delightful and comforting meal.
Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 cup basmati rice, rinsed and drained
- 2 cups chicken broth
- 1/2 cup dried barberries
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chicken thighs, skin side down, and cook until golden brown, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and sauté until translucent. Add the minced garlic, ground cumin, and turmeric, and cook for another 2 minutes, stirring constantly.
- Add the rinsed basmati rice to the skillet and stir to coat the rice with the onion and spice mixture.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
- Stir in the dried barberries and season with salt and pepper. Place the browned chicken thighs on top of the rice mixture, cover, and cook for an additional 15-20 minutes, or until the rice is tender and the chicken is fully cooked.
- Once done, fluff the rice with a fork and serve the Fragrant Cumin Chicken hot, garnished with fresh herbs if desired.
