Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 cup basmati rice, rinsed and drained
  • 2 cups chicken broth
  • 1/2 cup dried barberries
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken thighs, skin side down, and cook until golden brown, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the chopped onion and sauté until translucent. Add the minced garlic, ground cumin, and turmeric, and cook for another 2 minutes, stirring constantly.
  3. Add the rinsed basmati rice to the skillet and stir to coat the rice with the onion and spice mixture.
  4. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
  5. Stir in the dried barberries and season with salt and pepper. Place the browned chicken thighs on top of the rice mixture, cover, and cook for an additional 15-20 minutes, or until the rice is tender and the chicken is fully cooked.
  6. Once done, fluff the rice with a fork and serve the Fragrant Cumin Chicken hot, garnished with fresh herbs if desired.
