Zesty Lemon Rice

Ingredients

  • 2 cups basmati rice
  • 3 cups water
  • 1/4 cup lemon juice
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 2-3 green chilies, slit
  • 10-12 curry leaves
  • 1/4 cup peanuts
  • Salt to taste
  • 2 tbsp oil

Instructions

  1. Wash the rice and cook it in a pot or rice cooker with 3 cups of water.
  2. Once the rice is cooked, spread it on a plate to cool.
  3. In a pan, heat oil and add mustard seeds. When they start to crackle, add the slit green chilies, curry leaves, and peanuts. Sauté until the peanuts turn golden brown.
  4. Add turmeric powder and sauté for a few seconds.
  5. Add the cooked rice to the pan and mix well.
  6. Add salt and lemon juice. Mix until everything is well combined.
  7. Garnish with fresh coriander leaves and serve hot.
