Zesty Lemon Rice
Zesty Lemon Rice is a popular South Indian dish known for its vibrant flavors and refreshing taste. This simple yet flavorful rice dish is perfect for a quick and delicious meal.
Ingredients
- 2 cups basmati rice
- 3 cups water
- 1/4 cup lemon juice
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- 2-3 green chilies, slit
- 10-12 curry leaves
- 1/4 cup peanuts
- Salt to taste
- 2 tbsp oil
Instructions
- Wash the rice and cook it in a pot or rice cooker with 3 cups of water.
- Once the rice is cooked, spread it on a plate to cool.
- In a pan, heat oil and add mustard seeds. When they start to crackle, add the slit green chilies, curry leaves, and peanuts. Sauté until the peanuts turn golden brown.
- Add turmeric powder and sauté for a few seconds.
- Add the cooked rice to the pan and mix well.
- Add salt and lemon juice. Mix until everything is well combined.
- Garnish with fresh coriander leaves and serve hot.
