Zesty Oromo (Оромо)
Оромо (Zesty Oromo) is a traditional Kyrgyz dish that is bursting with flavor and is perfect for sharing with family and friends. This dish is a delicious combination of meat, vegetables, and spices, all wrapped in a thin, crispy dough.
Ingredients
- 500g lamb, thinly sliced
- 2 onions, finely chopped
- 3 tomatoes, diced
- 1 bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
- 2 cups all-purpose flour
- 1/2 cup water
- 2 tbsp vegetable oil
Instructions
- In a large bowl, mix the flour, water, and a pinch of salt to form a dough. Knead the dough for 5 minutes, then cover and let it rest for 30 minutes.
- In a skillet, heat the vegetable oil over medium heat. Add the lamb and cook until browned. Add the onions, tomatoes, bell pepper, and garlic. Cook for 5-7 minutes until the vegetables are tender.
- Season the lamb mixture with cumin, paprika, chili powder, salt, and pepper. Stir well and remove from heat.
- Divide the dough into 4 equal portions. Roll each portion into a thin circle.
- Place a portion of the lamb mixture on one half of each dough circle. Fold the other half over the filling and pinch the edges to seal.
- Heat a skillet over medium heat and cook each оромо for 3-4 minutes on each side until golden and crispy.
- Serve the оромо hot with a side of yogurt or sour cream.
