Zesty Samsa with Spinach and Cheese (Самса с шпинатом и сыром)

Ingredients

  • 2 cups chopped spinach
  • 1 cup crumbled feta cheese
  • 1/2 cup grated mozzarella cheese
  • 1/2 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 package of store-bought puff pastry sheets
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a mixing bowl, combine the chopped spinach, feta cheese, mozzarella cheese, green onions, minced garlic, paprika, cayenne pepper, salt, and pepper. Mix well to combine.
  2. Preheat the oven to 375°F (190°C).
  3. Roll out the puff pastry sheets and cut them into squares of desired size.
  4. Place a spoonful of the spinach and cheese mixture onto each pastry square.
  5. Brush the edges of the pastry with the beaten egg, then fold the pastry over the filling to form a triangle. Press the edges to seal.
  6. Place the samsas on a baking sheet lined with parchment paper, brush the tops with the remaining beaten egg, and bake for 20-25 minutes or until golden brown.
  7. Remove from the oven and let cool for a few minutes before serving.
