Zesty Shrimp Curry (Qwanta Be'siga)

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated
  • 2 tomatoes, diced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the chopped onion, garlic, and ginger, and sauté until the onion is soft and translucent.
  3. Stir in the diced tomatoes, cumin, coriander, turmeric, and cayenne pepper. Cook for 5 minutes, stirring occasionally.
  4. Pour in the coconut milk and bring the sauce to a simmer.
  5. Add the shrimp to the pan and cook for 5-7 minutes, or until the shrimp is pink and cooked through.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro before serving.
