Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ginger, grated
- 2 tomatoes, diced
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/2 tsp cayenne pepper
- 1 cup coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a large pan over medium heat.
- Add the chopped onion, garlic, and ginger, and sauté until the onion is soft and translucent.
- Stir in the diced tomatoes, cumin, coriander, turmeric, and cayenne pepper. Cook for 5 minutes, stirring occasionally.
- Pour in the coconut milk and bring the sauce to a simmer.
- Add the shrimp to the pan and cook for 5-7 minutes, or until the shrimp is pink and cooked through.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
