Zesty Shrimp Pasta (Qwanta Be'siga Firfir)

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 ounces pasta
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tomatoes, diced
  • 1/4 cup chopped fresh cilantro
  • Lemon wedges for serving

Instructions

  1. In a large pot of boiling salted water, cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic, paprika, cayenne pepper, cumin, salt, and pepper. Cook for 1-2 minutes until fragrant.
  4. Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
  5. Stir in the diced tomatoes and cooked pasta. Cook for an additional 2-3 minutes to heat through.
  6. Remove from heat and stir in the chopped cilantro.
  7. Serve the Qwanta Be'siga Firfir with lemon wedges on the side for squeezing over the dish.
