Ingredients
- 1 pound shrimp, peeled and deveined
- 8 ounces pasta
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 tomatoes, diced
- 1/4 cup chopped fresh cilantro
- Lemon wedges for serving
Instructions
- In a large pot of boiling salted water, cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic, paprika, cayenne pepper, cumin, salt, and pepper. Cook for 1-2 minutes until fragrant.
- Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
- Stir in the diced tomatoes and cooked pasta. Cook for an additional 2-3 minutes to heat through.
- Remove from heat and stir in the chopped cilantro.
- Serve the Qwanta Be'siga Firfir with lemon wedges on the side for squeezing over the dish.
