Ingredients
- 1 pound shrimp, peeled and deveined
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup lemon juice
Instructions
- In a large bowl, combine the shrimp, olive oil, garlic, paprika, cayenne pepper, salt, and black pepper. Toss to coat the shrimp evenly.
- Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until they are pink and opaque.
- In a separate large bowl, combine the salad greens, cherry tomatoes, red onion, parsley, and mint.
- Add the cooked shrimp to the salad bowl and drizzle with lemon juice. Toss gently to combine all the ingredients.
