Zesty Zucchini Fritters (Ζουμερά κολοκυθοκεφτέδες)

Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 2 green onions, finely chopped
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/2 cup all-purpose flour (or gluten-free flour blend)
  • 1 teaspoon baking powder
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, toss the grated zucchini with the salt and let it sit for 10 minutes. Then, squeeze out the excess moisture from the zucchini using a clean kitchen towel.
  2. Transfer the squeezed zucchini to a mixing bowl and add the green onions, dill, parsley, flour, baking powder, black pepper, and garlic. Mix well to combine.
  3. Heat the olive oil in a large non-stick skillet over medium heat.
  4. Scoop about 1/4 cup of the zucchini mixture for each fritter and drop it into the skillet, flattening it slightly with a spatula. Cook for 3-4 minutes per side, or until golden brown and crispy.
  5. Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil.
  6. Serve the Ζουμερά κολοκυθοκεφτέδες (Zesty Zucchini Fritters) warm with your favorite dipping sauce or yogurt tzatziki.
