Ingredients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 2 green onions, finely chopped
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- 1/2 cup all-purpose flour (or gluten-free flour blend)
- 1 teaspoon baking powder
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 2 tablespoons olive oil
Instructions
- In a large bowl, toss the grated zucchini with the salt and let it sit for 10 minutes. Then, squeeze out the excess moisture from the zucchini using a clean kitchen towel.
- Transfer the squeezed zucchini to a mixing bowl and add the green onions, dill, parsley, flour, baking powder, black pepper, and garlic. Mix well to combine.
- Heat the olive oil in a large non-stick skillet over medium heat.
- Scoop about 1/4 cup of the zucchini mixture for each fritter and drop it into the skillet, flattening it slightly with a spatula. Cook for 3-4 minutes per side, or until golden brown and crispy.
