Zha Chao Dou Fu (deep-fried Stuffed Tofu)
Zha Chao Dou Fu, or Deep-Fried Stuffed Tofu, is a classic dish in Putian (Henghwa) Cuisine, known for its flavorful filling and crispy exterior.
Ingredients
- 4 pieces of firm tofu
- 100g ground pork
- 1/2 cup chopped mushrooms
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 cup cornstarch
- Oil for frying
Instructions
- Prepare the tofu by cutting a slit in the middle of each piece to create a pocket for the filling.
- In a bowl, mix together the ground pork, chopped mushrooms, garlic, soy sauce, sesame oil, sugar, salt, and white pepper.
- Stuff the tofu pockets with the filling mixture.
- Dust the stuffed tofu with cornstarch.
- Heat oil in a pan and fry the stuffed tofu until golden brown and crispy.
- Remove from the pan and drain on paper towels.
