Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 2 eggs
- 1/2 cup cornstarch
- 1/4 cup green onions, finely chopped
- 1 teaspoon ginger, minced
- 1 teaspoon garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- Vegetable oil for frying
Instructions
- In a food processor, pulse the shrimp until finely chopped.
- In a large bowl, beat the eggs and then add the chopped shrimp, cornstarch, green onions, ginger, garlic, salt, and white pepper. Mix until well combined.
- Form the shrimp mixture into small balls, about 1 inch in diameter.
- Heat vegetable oil in a wok or deep frying pan over medium-high heat.
- Fry the shrimp balls in batches until golden brown and crispy, about 3-4 minutes per batch.
- Remove the shrimp balls with a slotted spoon and drain on paper towels.
