Zhe Sun Dou Ban Rou is a classic dish from Guizhou Cuisine, known for its bold and spicy flavors. This stir-fried pork with bamboo shoots and pickled chili is a perfect combination of tender pork, crunchy bamboo shoots, and the tangy kick of pickled chili.
Ingredients
- 1 lb pork loin, thinly sliced
- 1 cup bamboo shoots, sliced
- 3 tbsp pickled chili, chopped
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 2 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp ground white pepper
- 1/2 cup chicken broth
- 1 tsp cornstarch
- 2 green onions, chopped
Instructions
- Marinate the pork slices with soy sauce, Shaoxing wine, sugar, salt, and white pepper for 15 minutes.
- In a small bowl, mix the chicken broth and cornstarch to make a slurry.
- Heat vegetable oil in a wok over high heat. Add garlic, ginger, and pickled chili, stir-fry for 30 seconds.
- Add the marinated pork and stir-fry until cooked through.
- Add bamboo shoots and green onions, stir-fry for another 2 minutes.
- Pour in the chicken broth slurry and stir until the sauce thickens.
- Transfer to a serving dish and serve hot with steamed rice.
