Ingredients

  • 1 lb pork loin, thinly sliced
  • 1 cup bamboo shoots, sliced
  • 3 tbsp pickled chili, chopped
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp ground white pepper
  • 1/2 cup chicken broth
  • 1 tsp cornstarch
  • 2 green onions, chopped

Instructions

  1. Marinate the pork slices with soy sauce, Shaoxing wine, sugar, salt, and white pepper for 15 minutes.
  2. In a small bowl, mix the chicken broth and cornstarch to make a slurry.
  3. Heat vegetable oil in a wok over high heat. Add garlic, ginger, and pickled chili, stir-fry for 30 seconds.
  4. Add the marinated pork and stir-fry until cooked through.
  5. Add bamboo shoots and green onions, stir-fry for another 2 minutes.
  6. Pour in the chicken broth slurry and stir until the sauce thickens.
  7. Transfer to a serving dish and serve hot with steamed rice.
