Zhen Zhu Xia Fan (steamed Crab With Glutinous Rice)

Ingredients

  • 2 fresh crabs, cleaned and halved
  • 2 cups glutinous rice, soaked for 2 hours
  • 4 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tablespoons Shaoxing wine
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 cups chicken broth

Instructions

  1. Rinse the soaked glutinous rice and drain well.
  2. In a bowl, mix together the soy sauce, oyster sauce, sugar, sesame oil, salt, and white pepper.
  3. Place a portion of the seasoned rice in the bottom of a heatproof dish.
  4. Arrange the crab halves on top of the rice, then add the remaining rice around and on top of the crabs.
  5. Pour the chicken broth over the rice and crabs.
  6. Sprinkle the ginger, garlic, and green onions on top.
  7. Drizzle the Shaoxing wine over the dish.
  8. Steam over high heat for 1 hour.
  9. Serve the steamed crab with glutinous rice hot, garnished with additional green onions if desired.
