Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 200g shiitake mushrooms, sliced
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 1/2 cup chicken broth

Instructions

  1. Place the chicken thighs in a heatproof dish.
  2. Spread the sliced mushrooms over and around the chicken.
  3. In a small bowl, mix together the soy sauce, Shaoxing wine, oyster sauce, sugar, sesame oil, white pepper, and cornstarch.
  4. Heat the vegetable oil in a small saucepan over medium heat. Add the ginger and garlic, and cook until fragrant.
  5. Pour the chicken broth into the saucepan and bring to a simmer.
  6. Pour the hot broth over the chicken and mushrooms.
  7. Place the dish in a steamer and steam for 25-30 minutes, or until the chicken is fully cooked.
  8. Sprinkle with chopped green onions before serving.
