Ingredients
- 4 chicken thighs, bone-in and skin-on
- 200g shiitake mushrooms, sliced
- 3 slices ginger
- 2 cloves garlic, minced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1/2 teaspoon sesame oil
- 1/4 teaspoon white pepper
- 1 teaspoon cornstarch
- 1 tablespoon vegetable oil
- 1/2 cup chicken broth
Instructions
- Place the chicken thighs in a heatproof dish.
- Spread the sliced mushrooms over and around the chicken.
- In a small bowl, mix together the soy sauce, Shaoxing wine, oyster sauce, sugar, sesame oil, white pepper, and cornstarch.
- Heat the vegetable oil in a small saucepan over medium heat. Add the ginger and garlic, and cook until fragrant.
- Pour the chicken broth into the saucepan and bring to a simmer.
- Pour the hot broth over the chicken and mushrooms.
- Place the dish in a steamer and steam for 25-30 minutes, or until the chicken is fully cooked.
- Sprinkle with chopped green onions before serving.
