Zheng Ji Mu Er (steamed Chicken With Black Fungus)
Zheng Ji Mu Er, or Steamed Chicken with Black Fungus, is a classic dish from Putian (Henghwa) Cuisine, known for its light and fresh flavors.
Ingredients
- 500g chicken thighs, cut into pieces
- 30g black fungus, soaked and sliced
- 3 slices of ginger
- 2 cloves of garlic, minced
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 teaspoon cornstarch
- 1 tablespoon cooking oil
- 1 teaspoon sesame oil
- 1/2 cup chicken broth
Instructions
- In a bowl, marinate the chicken with soy sauce, oyster sauce, sugar, salt, white pepper, and cornstarch for 15 minutes.
- Heat the cooking oil in a pan, sauté the ginger and garlic until fragrant.
- Add the marinated chicken and stir-fry until the chicken is no longer pink.
- Add the black fungus, green onions, and chicken broth. Cover and simmer for 15 minutes.
- Drizzle with sesame oil before serving.
