Zheng Ji (steamed Chicken With Chinese Herbs)
Zheng Ji, or Steamed Chicken with Chinese Herbs, is a classic dish from Putian (Henghwa) Cuisine, known for its delicate flavors and healthful properties.
Ingredients
- 1 whole chicken, about 3 lbs, cleaned and cut into pieces
- 2 tbsp Shaoxing wine
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1 inch ginger, sliced
- 2 cloves garlic, minced
- 1 tbsp dried goji berries
- 1 tbsp dried red dates
- 1 tbsp dried wolfberries
- 1 tbsp dried Chinese yam
- 1 tbsp dried longan
- 1 tbsp dried codonopsis root
- 1 tbsp dried angelica root
- 1 tbsp dried huai shan
- 1 tbsp dried red ginseng
- 4 cups chicken broth
Instructions
- In a large bowl, marinate the chicken pieces with Shaoxing wine, soy sauce, oyster sauce, and sugar. Let it sit for 15 minutes.
- Place the marinated chicken in a heatproof dish and arrange the ginger and garlic on top.
- Add the dried herbs and fruits on and around the chicken.
- Pour the chicken broth over the chicken and herbs.
- Steam the dish over high heat for 40 minutes, or until the chicken is fully cooked.
- Serve the steamed chicken hot with the herbs and broth.
