Zheng Jiao, also known as Steamed Pork Dumplings, is a classic dish in Huaiyang Cuisine. These delicate and flavorful dumplings are a popular choice for dim sum or as a main course. They are filled with a savory mixture of ground pork and seasonings, then steamed to perfection.
Ingredients
- 1 lb ground pork
- 1/4 cup finely chopped scallions
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp Shaoxing wine
- 1 tsp grated ginger
- 1/2 tsp sugar
- 1/4 tsp white pepper
- 24 round dumpling wrappers
Instructions
- In a large bowl, mix together the ground pork, scallions, soy sauce, sesame oil, Shaoxing wine, ginger, sugar, and white pepper.
- Place a small spoonful of the pork mixture in the center of each dumpling wrapper. Moisten the edges of the wrapper with water, then fold and pleat to seal the dumplings.
- Arrange the dumplings in a single layer in a steamer basket lined with parchment paper.
- Steam the dumplings over boiling water for 12-15 minutes, until cooked through.
- Serve hot with soy sauce or your favorite dipping sauce.
