Ingredients

  • 1 whole duck, cut into pieces
  • 500g bamboo shoots, sliced
  • 3 slices of ginger
  • 2 cloves of garlic, minced
  • 2 green onions, chopped
  • 3 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 1 tsp salt
  • 4 cups water

Instructions

  1. Heat a wok or large pot over medium heat. Add the duck pieces and cook until browned.
  2. Add the ginger, garlic, and green onions. Stir-fry for 2 minutes.
  3. Pour in the soy sauce, dark soy sauce, Shaoxing wine, and sugar. Stir well to coat the duck.
  4. Add the bamboo shoots and water. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the duck is tender.
  5. Season with salt and adjust the seasoning to taste.
  6. Transfer to a serving dish and garnish with additional green onions, if desired.
