Ingredients

  • 2 boneless, skinless chicken breasts, shredded
  • 1 cup bamboo shoots, julienned
  • 3 cloves garlic, minced
  • 2 green onions, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 tablespoons vegetable oil

Instructions

  1. In a small bowl, mix together the soy sauce, Shaoxing wine, sugar, salt, and white pepper. Set aside.
  2. Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and stir-fry for 30 seconds.
  3. Add the shredded chicken to the wok and stir-fry for 2-3 minutes until it is no longer pink.
  4. Add the bamboo shoots and continue to stir-fry for another 2 minutes.
  5. Pour the sauce mixture over the chicken and bamboo shoots. Stir-fry for an additional 1-2 minutes until everything is well coated and heated through.
  6. Stir in the sliced green onions and remove from heat.
  7. Transfer to a serving dish and serve hot with steamed rice.
