Ingredients

  • 1 lb lamb, thinly sliced
  • 2 tbsp vegetable oil
  • 3-4 dried red chilies
  • 2 tsp Sichuan peppercorns
  • 1 tbsp cumin seeds
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 1 tsp sugar
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a wok or large skillet over high heat.
  2. Add the dried red chilies, Sichuan peppercorns, and cumin seeds. Stir-fry for 1-2 minutes until fragrant.
  3. Add the garlic, ginger, and green onions. Stir-fry for another minute.
  4. Add the sliced lamb and stir-fry for 2-3 minutes until the meat is browned.
  5. Stir in the soy sauce, Shaoxing wine, sugar, and salt. Cook for another 2-3 minutes until the lamb is cooked through.
  6. Transfer to a serving dish and garnish with additional chopped green onions, if desired.
