Ingredients
- 1 lb lamb, thinly sliced
- 2 tbsp vegetable oil
- 3-4 dried red chilies
- 2 tsp Sichuan peppercorns
- 1 tbsp cumin seeds
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp Shaoxing wine (or dry sherry)
- 1 tsp sugar
- Salt to taste
Instructions
- Heat the vegetable oil in a wok or large skillet over high heat.
- Add the dried red chilies, Sichuan peppercorns, and cumin seeds. Stir-fry for 1-2 minutes until fragrant.
- Add the garlic, ginger, and green onions. Stir-fry for another minute.
- Add the sliced lamb and stir-fry for 2-3 minutes until the meat is browned.
- Stir in the soy sauce, Shaoxing wine, sugar, and salt. Cook for another 2-3 minutes until the lamb is cooked through.
- Transfer to a serving dish and garnish with additional chopped green onions, if desired.
