Ingredients
- 4 medium potatoes, peeled and diced
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds

- 1 teaspoon salt

- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 green chili, sliced (optional)
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the cumin seeds and toast for 1-2 minutes until fragrant.
- Add the garlic, onion, and green chili to the skillet. Sauté until the onion is translucent.
- Add the diced potatoes, chili powder, salt, and black pepper. Stir to combine.
- Cover the skillet and cook for 20-25 minutes, stirring occasionally, until the potatoes are tender.
- Garnish with fresh cilantro before serving.
