Ingredients

  • 3 lbs lamb shoulder, bone-in
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 cup beef broth

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a small bowl, mix together the minced garlic, olive oil, paprika, thyme, rosemary, salt, and pepper to create a marinade.
  3. Rub the marinade all over the lamb shoulder, ensuring it is evenly coated.
  4. Place the lamb shoulder in a roasting pan and pour the beef broth into the pan.
  5. Cover the roasting pan with foil and roast in the preheated oven for 2 hours.
  6. Remove the foil and continue roasting for an additional 1 hour, or until the lamb is tender and golden brown.
  7. Once cooked, remove the lamb from the oven and let it rest for 10 minutes before slicing and serving.
