Ingredients

  • 2 lbs chicken, cut into pieces

  • 2 tbsp tomato paste
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced

  • 1 tsp thyme
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add onions, ginger, and garlic. Sauté until onions are translucent.
  3. Add chicken pieces and brown on all sides.
  4. Stir in tomato paste, paprika, curry powder, thyme, and chili powder.
  5. Add tomatoes, bell peppers, and pineapple. Stir to combine.
  6. Season with salt and pepper. Cover and simmer for 30 minutes, stirring occasionally.
  7. Serve hot and enjoy!
