Zucchini Salsa

Ingredients

  • 3 cups diced zucchini
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 jalapeno, seeded and minced
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced zucchini, onion, bell pepper, jalapeno, garlic, and cilantro.
  2. Stir in the lime juice and cumin. Season with salt and pepper to taste.
  3. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
