Zui Ji, or Drunken Chicken, is a classic dish from Huaiyang Cuisine known for its tender and flavorful chicken infused with Shaoxing wine.

Ingredients

  • 1 whole chicken, about 3 lbs
  • 1 cup Shaoxing wine
  • 3 slices ginger
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp salt

Instructions

  1. Bring a large pot of water to a boil.
  2. Add the chicken, ginger, and green onions to the pot. Reduce heat and simmer for 15 minutes.
  3. Remove the chicken and place it in a bowl of ice water to cool. Then, cut the chicken into bite-sized pieces.
  4. In a separate bowl, mix the Shaoxing wine, soy sauce, sugar, and salt. Pour the mixture over the chicken.
  5. Cover and refrigerate for at least 2 hours before serving.
