Ingredients

  • 1 pound fresh shrimp, deveined and peeled
  • 1/2 cup Shaoxing wine
  • 2 tablespoons ginger, thinly sliced
  • 2 green onions, cut into 2-inch pieces
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • Ice water, for soaking shrimp

Instructions

  1. Soak the shrimp in ice water for 5 minutes, then drain and pat dry with paper towels.
  2. In a large bowl, combine the shrimp, Shaoxing wine, ginger, green onions, sugar, and salt. Mix well and let marinate for 15 minutes.
  3. Heat a wok or large skillet over high heat. Add the marinated shrimp and cook for 2-3 minutes, until the shrimp turn pink and curl up.
  4. Transfer the shrimp to a serving plate and serve hot.
