Zui Xia (drunken Shrimp)
Zui Xia, or Drunken Shrimp, is a traditional dish from Zhejiang Cuisine known for its fresh and delicate flavors. The shrimp are marinated in a mixture of Shaoxing wine and other seasonings, giving them a unique and delicious taste.
Ingredients
- 1 pound fresh shrimp, deveined and peeled
- 1/2 cup Shaoxing wine
- 2 tablespoons ginger, thinly sliced
- 2 green onions, cut into 2-inch pieces
- 1 teaspoon sugar
- 1/2 teaspoon salt
- Ice water, for soaking shrimp
Instructions
- Soak the shrimp in ice water for 5 minutes, then drain and pat dry with paper towels.
- In a large bowl, combine the shrimp, Shaoxing wine, ginger, green onions, sugar, and salt. Mix well and let marinate for 15 minutes.
- Heat a wok or large skillet over high heat. Add the marinated shrimp and cook for 2-3 minutes, until the shrimp turn pink and curl up.
- Transfer the shrimp to a serving plate and serve hot.
