Zuppa Di Coda: Molisan Oxtail Soup

Ingredients

  • 2 lbs oxtail
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 6 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 2 bay leaves
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large pot, brown the oxtail pieces over medium-high heat for 5 minutes.
  2. Add the chopped onion, diced carrots, diced celery, and minced garlic to the pot. Cook for another 5 minutes.
  3. Pour in the red wine and let it simmer for 5 minutes, allowing the alcohol to evaporate.
  4. Add the beef broth, diced tomatoes, bay leaves, salt, and pepper. Bring to a boil, then reduce the heat to low and let it simmer for 3 hours, or until the oxtail is tender.
  5. Once the oxtail is tender, remove it from the pot and shred the meat. Discard the bones and return the shredded meat to the pot.
  6. Stir in the chopped parsley and let the soup simmer for an additional 10 minutes.
  7. Adjust the seasoning if needed, then serve the Zuppa di Coda hot.
