Zuppa Di Coda: Molisan Oxtail Soup
Zuppa di Coda, or Molisan Oxtail Soup, is a traditional dish from the Abruzzese and Molisan cuisine that is hearty, flavorful, and perfect for a cozy meal on a cold day.
Ingredients
- 2 lbs oxtail
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 cup red wine
- 6 cups beef broth
- 1 can (14 oz) diced tomatoes
- 2 bay leaves
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
- In a large pot, brown the oxtail pieces over medium-high heat for 5 minutes.
- Add the chopped onion, diced carrots, diced celery, and minced garlic to the pot. Cook for another 5 minutes.
- Pour in the red wine and let it simmer for 5 minutes, allowing the alcohol to evaporate.
- Add the beef broth, diced tomatoes, bay leaves, salt, and pepper. Bring to a boil, then reduce the heat to low and let it simmer for 3 hours, or until the oxtail is tender.
- Once the oxtail is tender, remove it from the pot and shred the meat. Discard the bones and return the shredded meat to the pot.
- Stir in the chopped parsley and let the soup simmer for an additional 10 minutes.
- Adjust the seasoning if needed, then serve the Zuppa di Coda hot.
