Ingredients
- 1 cup dried cannellini beans
- 4 cups water
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- Salt and pepper to taste

Instructions
- In a large pot, soak the dried cannellini beans in water overnight.
- Drain and rinse the beans, then return them to the pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for 1 hour, or until the beans are tender.
- In a separate pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened.
- Stir in the diced tomatoes, vegetable broth, and oregano. Add the cooked beans and simmer for an additional 15 minutes.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with grated Parmesan cheese.
