Zuppa Di Fagioli: Molisan Bean Soup

Ingredients

  • 1 cup dried cannellini beans
  • 4 cups water
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, soak the dried cannellini beans in water overnight.
  2. Drain and rinse the beans, then return them to the pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for 1 hour, or until the beans are tender.
  3. In a separate pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened.
  4. Stir in the diced tomatoes, vegetable broth, and oregano. Add the cooked beans and simmer for an additional 15 minutes.
  5. Season with salt and pepper to taste.
  6. Serve the soup hot, garnished with grated Parmesan cheese.
