Ingredients

  • 1 pound Italian sausage
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 3 cups water
  • 2 large russet potatoes, sliced into 1/4 inch slices
  • 1 cup heavy cream
  • 2 cups kale, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the Italian sausage over medium heat. Once cooked, remove the sausage from the pot and set aside.
  2. In the same pot, add the chopped bacon and cook until crispy. Add the diced onion and minced garlic, and cook until the onion is translucent.
  3. Pour in the chicken broth and water, and bring to a boil. Add the sliced potatoes and simmer until they are tender.
  4. Stir in the cooked Italian sausage and heavy cream. Add the chopped kale and let it simmer for a few more minutes until the kale is wilted.
  5. Season with salt and pepper to taste. Serve hot and enjoy!
