Zuppa Toscana (zuppa Toscana)
Zuppa Toscana is a classic Italian soup that is hearty, flavorful, and perfect for a cozy night in. This soup is packed with Italian sausage, potatoes, kale, and a creamy broth that will warm you up from the inside out.
Ingredients
- 1 pound Italian sausage
- 4 slices bacon, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 3 cups water
- 2 large russet potatoes, sliced into 1/4 inch slices
- 1 cup heavy cream
- 2 cups kale, chopped
- Salt and pepper to taste
Instructions
- In a large pot, brown the Italian sausage over medium heat. Once cooked, remove the sausage from the pot and set aside.
- In the same pot, add the chopped bacon and cook until crispy. Add the diced onion and minced garlic, and cook until the onion is translucent.
- Pour in the chicken broth and water, and bring to a boil. Add the sliced potatoes and simmer until they are tender.
- Stir in the cooked Italian sausage and heavy cream. Add the chopped kale and let it simmer for a few more minutes until the kale is wilted.
- Season with salt and pepper to taste. Serve hot and enjoy!
