Zürcher Geschnetzeltes, also known as Zurich Veal, is a classic Swiss dish featuring thinly sliced veal in a creamy mushroom sauce. This dish is a staple in Swiss cuisine and is often served with Rösti or noodles.
Ingredients
- 500g veal, thinly sliced
- 2 tablespoons butter
- 1 onion, finely chopped
- 200g mushrooms, sliced
- 1 cup beef broth
- 1 cup heavy cream
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Melt 1 tablespoon of butter in a large skillet over medium-high heat.
- Add the veal slices and cook until browned. Remove from the skillet and set aside.
- In the same skillet, melt the remaining butter and sauté the onions until translucent.
- Add the mushrooms and cook until they release their liquid.
- Sprinkle the flour over the mushroom mixture and stir to combine.
- Pour in the beef broth and simmer until the sauce thickens.
- Stir in the heavy cream and return the veal to the skillet. Cook for a few more minutes until the veal is cooked through.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
