Zurich Veal (Zürcher Geschnetzeltes)

Ingredients

  • 500g veal, thinly sliced
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 200g mushrooms, sliced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt 1 tablespoon of butter in a large skillet over medium-high heat.
  2. Add the veal slices and cook until browned. Remove from the skillet and set aside.
  3. In the same skillet, melt the remaining butter and sauté the onions until translucent.
  4. Add the mushrooms and cook until they release their liquid.
  5. Sprinkle the flour over the mushroom mixture and stir to combine.
  6. Pour in the beef broth and simmer until the sauce thickens.
  7. Stir in the heavy cream and return the veal to the skillet. Cook for a few more minutes until the veal is cooked through.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving.
