Zurich Zucchini Soup (Zürcher Zucchettensuppe)

Ingredients

  • 4 medium zucchinis, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the chopped zucchini to the pot and cook for another 5 minutes.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes.
  4. Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return it to the pot.
  5. Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes.
  6. Serve the soup hot, garnished with a drizzle of cream and a sprinkle of freshly ground black pepper.
