Ingredients
- 4 medium zucchinis, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the chopped zucchini to the pot and cook for another 5 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes.
- Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return it to the pot.
- Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes.
- Serve the soup hot, garnished with a drizzle of cream and a sprinkle of freshly ground black pepper.
