Faroese Lobster Bisque (Hummarbúða)

Hummarbúða, or Faroese Lobster Bisque, is a traditional seafood soup from the Faroe Islands. This rich and creamy bisque is made with fresh lobster, vegetables, and a blend of aromatic spices, making it a perfect dish for special occasions or a cozy night in.

Faroese Lobster Bisque (Hummarbúða)

Ingredients

  • 2 fresh lobsters, about 1 1/2 pounds each
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1/4 cup tomato paste
  • 1/2 cup dry white wine
  • 6 cups fish or seafood stock
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the lobsters and cook for 8-10 minutes. Remove the lobsters and let them cool. Once cooled, remove the meat from the claws and tails, and chop into bite-sized pieces. Set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are soft, about 8 minutes. Add the garlic and cook for an additional 2 minutes.
  3. Stir in the tomato paste and cook for 2 minutes. Pour in the white wine and cook until it has reduced by half.
  4. Add the seafood stock, paprika, and cayenne pepper. Bring the mixture to a simmer and cook for 20 minutes.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend in batches, then return the soup to the pot.
  6. Stir in the heavy cream and lobster meat. Simmer for an additional 10 minutes. Season with salt and pepper to taste.
  7. Serve the Hummarbúða hot, garnished with a sprinkle of paprika and fresh parsley.
