Faroese Lobster Bisque (Hummarbúða)
Hummarbúða, or Faroese Lobster Bisque, is a traditional seafood soup from the Faroe Islands. This rich and creamy bisque is made with fresh lobster, vegetables, and a blend of aromatic spices, making it a perfect dish for special occasions or a cozy night in.
Ingredients
- 2 fresh lobsters, about 1 1/2 pounds each
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1/4 cup tomato paste
- 1/2 cup dry white wine
- 6 cups fish or seafood stock
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the lobsters and cook for 8-10 minutes. Remove the lobsters and let them cool. Once cooled, remove the meat from the claws and tails, and chop into bite-sized pieces. Set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are soft, about 8 minutes. Add the garlic and cook for an additional 2 minutes.
- Stir in the tomato paste and cook for 2 minutes. Pour in the white wine and cook until it has reduced by half.
- Add the seafood stock, paprika, and cayenne pepper. Bring the mixture to a simmer and cook for 20 minutes.
- Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend in batches, then return the soup to the pot.
- Stir in the heavy cream and lobster meat. Simmer for an additional 10 minutes. Season with salt and pepper to taste.
- Serve the Hummarbúða hot, garnished with a sprinkle of paprika and fresh parsley.
