Ingredients
- 1 lb (450g) fresh salmon fillet, skin on
- 1/4 cup (50g) coarse sea salt
- 1/4 cup (50g) granulated sugar
- 1 tablespoon (15ml) whole black peppercorns
- 1/4 cup (60ml) Dijon mustard
- 2 tablespoons (30ml) honey
- 2 tablespoons (30ml) white wine vinegar
- 1/4 cup (60ml) vegetable oil
- Fresh dill, for garnish
- Thinly sliced rye bread or crispbread, for serving
Instructions
- Combine the sea salt, sugar, and peppercorns in a small bowl.
- Place the salmon fillet, skin-side down, on a large piece of plastic wrap.
- Coat the salmon evenly with the salt-sugar mixture, then wrap it tightly in the plastic wrap.
- Place the wrapped salmon in a shallow dish and refrigerate for 24-48 hours, flipping the salmon every 12 hours and basting it with any accumulated juices.
- After curing, unwrap the salmon and rinse off the salt-sugar mixture under cold water. Pat the salmon dry with paper towels.
- For the mustard sauce, whisk together the Dijon mustard, honey, white wine vinegar, and vegetable oil until smooth and well combined.
- Thinly slice the cured salmon and arrange it on a serving platter. Garnish with fresh dill.
- Serve the gravlax with the mustard sauce and thinly sliced rye bread or crispbread.
