Kokoda (island Delight)
Kokoda, also known as Oka, is a traditional dish from the Solomon Islands that features fresh fish marinated in citrus juice and coconut cream. This refreshing and flavorful dish is perfect for warm weather and is a popular choice among locals and visitors alike.
Ingredients
- 1 lb fresh fish fillets, cut into bite-sized pieces
- 1 cup lime juice
- 1 cup coconut cream
- 1 tomato, diced
- 1 cucumber, diced
- 1 onion, thinly sliced
- 1-2 chili peppers, finely chopped (optional)
- Salt and pepper to taste
Instructions
- In a glass or ceramic bowl, place the fish pieces and cover with lime juice. Let it marinate in the refrigerator for at least 2 hours, or until the fish turns opaque and "cooked" in the acidity of the lime juice.
- Once the fish is "cooked," drain off the lime juice and add the coconut cream, diced tomato, cucumber, onion, and chili peppers (if using). Season with salt and pepper, then gently mix to combine.
- Chill the kokoda in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together.
