Ingredients
- 1 cup dried lentils
- 1 onion, finely chopped
- 2 cloves garlic, minced

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs

Instructions
- In a large pot, cook the lentils according to package instructions until tender. Drain and set aside.
- In a skillet, sauté the onion and garlic until softened. Remove from heat and let cool.
- In a large bowl, combine the cooked lentils, sautéed onion and garlic, flour, baking powder, cumin, paprika, salt, and black pepper.
- In a separate bowl, whisk together the eggs and milk. Pour the egg mixture into the lentil mixture and stir until well combined.
- Heat olive oil in a non-stick skillet over medium heat. Pour 1/4 cup of the batter into the skillet and spread it into a round shape. Cook for 2-3 minutes on each side, until golden brown.
- Repeat with the remaining batter, adding more oil to the skillet as needed.
- Serve the lentil pancakes hot with your favorite toppings or sauces.
