Mongolian Fried Noodles (Говьтай шөл)

Ingredients

  • 250g egg noodles
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 2 carrots, julienned
  • 1 bell pepper, thinly sliced
  • 200g cabbage, shredded
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Boil the egg noodles according to package instructions, then drain and set aside.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat.
  3. Add the onion, carrots, and bell pepper to the pan, and stir-fry for 3-4 minutes until slightly softened.
  4. Add the cabbage and garlic to the pan, and continue to stir-fry for another 2-3 minutes.
  5. Push the vegetables to one side of the pan, and pour the soy sauce, oyster sauce, and sugar into the cleared space.
  6. Stir the sauce ingredients together, then mix with the vegetables in the pan.
  7. Add the cooked noodles to the pan, and toss everything together until well combined and heated through.
  8. Season with salt and pepper to taste.
  9. Remove from heat and serve hot.
