Mongolian Fried Noodles (Говьтай шөл)

Ingredients
- 250g egg noodles
- 2 tablespoons vegetable oil
- 1 onion, thinly sliced
- 2 carrots, julienned
- 1 bell pepper, thinly sliced
- 200g cabbage, shredded
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- Salt and pepper to taste
Instructions
- Boil the egg noodles according to package instructions, then drain and set aside.
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the onion, carrots, and bell pepper to the pan, and stir-fry for 3-4 minutes until slightly softened.
- Add the cabbage and garlic to the pan, and continue to stir-fry for another 2-3 minutes.
- Push the vegetables to one side of the pan, and pour the soy sauce, oyster sauce, and sugar into the cleared space.
- Stir the sauce ingredients together, then mix with the vegetables in the pan.
- Add the cooked noodles to the pan, and toss everything together until well combined and heated through.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
