Ingredients

  • 1 cup semolina (rava)
  • 1/2 cup rice flour
  • 1/4 cup all-purpose flour
  • 1 onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1/4 inch ginger, grated
  • 1/4 cup coriander leaves, chopped
  • 1/2 tsp cumin seeds
  • 1/4 tsp black pepper
  • Salt to taste
  • 3 cups water
  • Oil for cooking

Instructions

  1. In a large mixing bowl, combine semolina, rice flour, all-purpose flour, chopped onions, green chilies, ginger, coriander leaves, cumin seeds, black pepper, and salt.
  2. Slowly add water and mix until you get a thin, pourable batter. Let it rest for 10 minutes.
  3. Heat a non-stick pan or cast iron skillet over medium heat. Drizzle a few drops of oil and spread it using a paper towel.
  4. Pour a ladleful of the batter onto the pan in a circular motion to form a thin layer. Drizzle some oil around the edges.
  5. Cook until the edges start to brown and the dosa turns crispy. Flip and cook for another minute.
  6. Remove the dosa from the pan and serve hot with coconut chutney or sambar.
