Roasted Gram Flour Stuffed Flatbread (sattu Paratha)

Ingredients
- 2 cups whole wheat flour
- 1 cup sattu (roasted gram flour)
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger, grated
- 1/2 teaspoon ajwain (carom seeds)
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons ghee (clarified butter)
- Water as needed
Instructions
- In a mixing bowl, combine whole wheat flour, water, and knead into a smooth dough. Cover and let it rest for 15 minutes.
- In another bowl, mix sattu, chopped onion, green chilies, grated ginger, ajwain, turmeric powder, red chili powder, garam masala, salt, and ghee to make the stuffing.
- Divide the dough into equal-sized balls and roll each ball into a small disc. Place a portion of the stuffing in the center and seal the edges to form a stuffed ball.
- Roll out the stuffed ball into a paratha using a rolling pin, ensuring the stuffing is evenly spread.
- Heat a griddle or tawa over medium heat and cook the paratha on both sides until golden brown, applying ghee as needed.
- Serve hot with yogurt, pickle, or chutney.
