Sindhi Koki Quesadilla

Ingredients
- 2 cups whole wheat flour
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/2 cup fresh coriander, chopped
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- Salt to taste
- Water as needed
- 1 cup grated cheese
- Butter for cooking
Instructions
- In a large mixing bowl, combine the whole wheat flour, onion, green chilies, coriander, cumin seeds, turmeric powder, and salt. Gradually add water and knead into a firm dough. Divide the dough into 4 equal portions and roll each portion into a ball.
- On a floured surface, roll out each ball of dough into a flat, round koki (like a thick tortilla).
- Heat a non-stick pan over medium heat and cook each koki for 2-3 minutes on each side, applying a little butter, until golden brown spots appear.
- Sprinkle grated cheese on one half of each koki and fold the other half over to create a semi-circle shape.
- Cook the koki quesadillas in the pan for 2-3 minutes on each side, until the cheese is melted and the koki is crispy.
- Remove from the pan, cut into wedges, and serve hot.
