Spiced Semolina Upma (fragrant Kharabath Upma)
Spiced Semolina Upma, also known as Fragrant Kharabath Upma, is a traditional breakfast dish from Uttara Karnataka Cuisine. This flavorful and aromatic dish is made with semolina, spices, and vegetables, and is a popular choice for a hearty and satisfying breakfast.
Ingredients
- 1 cup semolina
- 2 tablespoons ghee
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 1 green chili, finely chopped
- 1/2 inch ginger, grated
- 1 carrot, finely chopped
- 1/2 cup green peas
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 cups water
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a pan and add mustard seeds and cumin seeds. Once they splutter, add the chopped onion, green chili, and grated ginger. Sauté until the onions turn translucent.
- Add the chopped carrot and green peas. Cook for a few minutes until the vegetables are slightly tender.
- Meanwhile, in a separate pan, dry roast the semolina until it turns aromatic and slightly golden. Keep it aside.
- Add the roasted semolina to the pan with the vegetables. Mix well and sauté for a couple of minutes.
- Pour in the water, add turmeric powder, red chili powder, and salt. Mix well and cook until the upma thickens and the semolina is cooked through.
- Garnish with fresh coriander leaves and serve hot.
