Spiced Semolina Upma (fragrant Kharabath Upma)

Ingredients

  • 1 cup semolina
  • 2 tablespoons ghee
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 1 green chili, finely chopped
  • 1/2 inch ginger, grated
  • 1 carrot, finely chopped
  • 1/2 cup green peas
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 cups water
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a pan and add mustard seeds and cumin seeds. Once they splutter, add the chopped onion, green chili, and grated ginger. Sauté until the onions turn translucent.
  2. Add the chopped carrot and green peas. Cook for a few minutes until the vegetables are slightly tender.
  3. Meanwhile, in a separate pan, dry roast the semolina until it turns aromatic and slightly golden. Keep it aside.
  4. Add the roasted semolina to the pan with the vegetables. Mix well and sauté for a couple of minutes.
  5. Pour in the water, add turmeric powder, red chili powder, and salt. Mix well and cook until the upma thickens and the semolina is cooked through.
  6. Garnish with fresh coriander leaves and serve hot.
